POSH SCONES with CLOTTED CREAM and BOOZY STRAWBERRIES - 30 minutes ~ Serves 12
225g self-raising flour
1 tsp baking powder
Pinch of ground cloves
25g caster sugar
125g butter, diced
2 to 3 tbsp milk
1 medium egg
300g clotted cream
For the Strawberries:
50ml (2fl oz) Kirsch
1 tbsp icing sugar
300g small strawberries, halved or
sliced if large
Preheat the oven to 200 C.
Tip the flour, baking powder, cloves and sugar into a food processor and whizz briefly. Add the
diced butter and whizz until you have coarse crumbs. Whisk together the milk and egg and add
to the processor with the motor running. When it forms a ball, stop the motor (add more milk if
necessary).
Turn out on to a lightly floured surface and knead gently, then roll and cut out 12 rounds.
Arrange on a tray and bake for about 10 minutes or until puffy and golden.
Stir together the Kirsch and icing sugar until the sugar has dissolved. Add the strawberries,
cover and leave for 15 minutes.
Halve the scones, dollop with clotted cream and top with a couple of soaked strawberries.
